Your Comfort Food Dinner Menu


Eating healthy doesn’t have to be boring and you don’t have to give up all of your favorite foods. I like to create healthy versions of all of the dishes I love to eat. These are a few of my favorite recipes that I get asked for all of the time! 


After being diagnosed with a potato intolerance I HAD to find something to replace my beloved mashed potatoes. This Cauliflower mash will easily replace your mashed potatoes and you won’t miss them! If I served them to you and told you they were loaded mashed potatoes you would believe it! Last time I made this for a dinner party everyone left with the recipe. 


Meatloaf is a classic comfort food dish. I don’t love the name but I do love the taste! Skip the seasoning packets for your meatloaf with this homemade recipe. Not only is it healthier but it is tastier too. 


Vegetables don’t have to be boring either. Don’t hold back on the butter when you’re making steamed veggies. Butter has been villainized in the past but there’s a new sheriff in town and it seems that butter was unjustly accused. Here’s a few fun facts about butter that will have you drizzling it over everything.


  • 14g of grassfed butter has 500 IU of Vitamin A

  • Contains antioxidants that protects our bodies from free radicals that can cause cancer and heart disease

MEATLOAF, CAULIFLOWER MASH, STEAMED GREEN BEANS


MEATLOAF


INGREDIENTS:


  • 1 ½ lbs grass fed lean ground beef

  • 2 large eggs 

  • 2 cloves garlic

  • 1 medium onion

  • ½ green bell pepper, chopped

  • 2 medium stalk celery

  • ½ cup all natural tomato sauce

  • 1 cup bread crumbs

  • 1 tsp dijon mustard

  • 2 Tablespoons dried parsley

  • 2 tsp salt


DIRECTIONS:


  1. Preheat the oven to 350°F.

  2. Combine beef, egg, garlic, onion, bell pepper, celery, tomato sauce, breadcrumbs, mustard, parsley and salt in a large bowl. Mix well with clean hands.

  3. Place mixture in loaf pan or 9 x 13 baking dish and shape. Bake for 50 to 60 minutes or until cooked through. 


CAULIFLOWER MASHED


INGREDIENTS:


  • 1 large head cauliflower

  • 6 oz cream cheese, cut into cubes

  • ¾  cup sour cream

  • ½  cup green onions, sliced

  • ½  cup grated Parmesan or Romano Cheese

  • 1 cup grated sharp cheddar cheese

  • 6 slices bacon, cooked until very crisp, fat blotted with paper towel and crumbled



DIRECTIONS:


Preheat the oven to 350°F.


Spray the casserole dish with olive oil or non-stick spray. Cut out stem and core from cauliflower and cut into small pieces. Cook in a large pot of boiling salted water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher or fork until smooth to your liking. 


While cauliflower is cooking, cook the bacon and crumble. Mix cream cheese, sour cream, green onion, parmesan and ¾ of the crumbled bacon into the mashed cauliflower. Spread evenly in a 1.5 Quart glass casserole dish. Sprinkle it with cheddar cheese and reserved bacon. Bake for 20-25 minutes covered or until hot and bubbly. Remove the lid and bake for about 10 more minutes, or until the cheese is slightly brown. 


NOTE: This reheats well and can be frozen or thawed in the fridge, then reheated. 




STEAMED GREEN BEANS


INGREDIENTS:


  • 1 lb fresh organic green beans

  • 2 Tablespoons butter

  • Salt & Pepper to taste


DIRECTIONS:


  • Place trimmed green beans in a steamer basket in a saucepan filled with 1-2 inches of water

  • Bring to a boil on high heat and reduce to medium for 5-7 minutes (or until desired tenderness)

  • Take off heat and discard the water in the saucepan. 

  • Add butter, salt and pepper and stir until butter is melted and serve.
